MOROCCO TIME:

Harira, the national soup

During the 30 days of Ramadan, every house prepares this fragrant soup, whose scent wafts onto the streets at sundown. It is eaten along with dates, or honey sweeties (Chabakkia, briouats with almonds and honey).

Serves 12
There are two parts to the preparation:
1. Bubbling
2. Tédouira

The Bubbling requires one and a half hours of cooking
• 250 g (8 oz) of beef or mutton meat chopped fine
• 4 or 5 small fleshy bones
• 500 g (1 lb) of whole small onions
• 1 half tbsp of saffron
• 1 tbsp of pepper
• 1 butter walnut
• 250 g (8 oz) of lentils
• 1 pinch of salt
• 1 and a half litres (1 and a half quarts) of water

Preparation

Cook the lentils in salted water, adding the juice of one citron. Put aside. Cook the other ingredients in a covered saucepan over low heat and after boiling, remove the onions when they are cooked to keep them whole. After an hour, verify that the meat is cooked and then add the lentils and onions.

The Tédouira requires one hour of cooking
• 1 bouquet of coriander
• 1 bouquet of parsley
• 1 and a half kilos (1 and one half lbs) of crushed tomatoes
• 2 and a half litres (2 and a half quarts) of water
• 1 cup tea of lemon juice
• 1 butter walnut
• 1 pinch of salt
• 200 g (6.4 oz) of flour

Preparation

Boil water with the crushed tomatoes, add butter and then boil for a quarter of an hour; add this bubbling juice to the meat, lentils, and onion mixture. In another saucepan, combine the flour with 1 litre of water, shaking fast to avoid clotting. Return to the heat and shake the mixture until boiling. Crush the coriander and parsley in a mortar and add along with the salt. Dilute with 1 litre of water and pour into the marmite (the meat, lentil, onion mixture), while stirring constantly. Adjust the seasonings to taste and remove from the heat when the soup is very hot. The harira should be velvety, not thick.
